When it comes to tea-infused cocktails, we often make an infused simple syrup for our recipes; however, you can also directly infuse various spirits with tea.
This method works well for cocktails that are traditionally light on the sweetener (or aren’t sweet at all!). One of our favorite cocktails is the French 75, and for this recipe we have infused gin with Jasmine Silver Needle white tea leaves.
The result is a crisp, fragrant cocktail that is an invigorating twist on an old classic. It adds a sparkly quality to an already effervescent cocktail, and the heady notes of jasmine lend the French 75 an extra element of glamour.
JASMINE 75:
1.5 oz gin infused with Jasmine Silver Needle*
1 oz simple syrup
3/4 oz lemon juice
Brut Champagne
Lemon for garnish
Combine gin, lemon juice and simple syrup in a cocktail shaker with ice. Shake vigorously and pour into a chilled champagne glass. Top with brut Champagne and garnish with a lemon twist.
To infuse gin with Jasmine Silver Needle:
2 tbsp dry Jasmine Silver Needle tea leaves
8oz gin
Combine Jasmine Silver Needle and gin in a glass or measuring cup. Cover and let infuse for at least one hour at room temperature. Strain tea leaves from the gin prior to use.
