And now, we’d like to re-share one of the first tea cocktails we ever created: The Lady Grey! For this cocktail we pair two of England’s finest: Earl Grey (Lavender) and gin. We recommend a particularly floral gin for this cocktail (like Botanist Gin), but any gin you’ve got on hand will do.
The real star of this cocktail is the Earl Grey Lavender infused honey simple syrup. It’s delicate, but the distinctive black tea flavor shines through, especially when paired with dry gin.
This cocktail should be an instant classic. It’s delightful. A harmonious balance of sweet lavender, brisk bergamot, and the dry zing of gin in the finish. The entire drink is brightened to a positively radiant degree by that final touch of citric acid from the lemon juice. The ideal spring cocktail for quarantine happy hour.
Ingredients:3 tsp raw honey
2 tbsp Earl Grey Lavender tea

1 lemon.
EGL Honey Simple Syrup: Bring 8oz of water to boil then remove from stove. Pour into a glass or bowl and add 3 tsp of raw honey and 4 tsp Earl Grey Lavender. Steep for 3 minutes, then strain into a measuring cup.
How to make: In a cocktail shaker, combine gin, 2oz EGL simple syrup, and a squeeze of lemon juice. Shake and pour over ice. Garnish with a lemon twist. Enjoy!
