This August midday heat is positively smothering, and that calls for something cold and invigorating to get us through the afternoon. We decided to whip up a cocktail that tastes light and refreshing, like sitting in your favorite room with every window open, all soft sunlight and a light breeze. Remember those days?
Enter one of our old floral cocktails, the Lavender Sage Collins. To make this delicate cocktail, all you need is the following:
3oz
Lavender Citrus Sage simple syrup*
1-2oz Gin
Squeeze of lemon juice
Sparkling mineral water (or club soda)
Start by making your
Lavender Citrus Sage simple syrup. Boil water and remove from heat. Steep 2 tbsp
Lavender Citrus Sage loose leaf tea in 8oz water for 5 minutes. When finished steeping, strain tea into glass or bowl.
Add 1.5 tbsp of a
light raw honey and stir until dissolved.
In a cocktail shaker, combine ice, the simple syrup, gin and lemon juice. Shake and strain into a Collins glass filled with ice. Top with sparkling mineral water (or club soda), stir gently to mix, and garnish with fresh sage.
