Gyokuro, meaning Pearl Dew in Japanese, is one of the world’s most exclusive teas. Its unique production method creates a distinctive flavor profile highly sought after by tea novices and aficionados alike. Approximately three weeks prior to harvest, the delicate leaves are shaded using large canvas covers that block nearly all of the sun’s rays. Shielding the plant from light inhibits photosynthesis, resulting in an overproduction of chlorophyll, an excess of stored nutrients, and a reduction in tannins. The result is a vibrantly green tea with a sweet, mild flavor lacking bitterness. Our Extra Fine Gyokuro is made using only the tender leaf tips from the first harvest. It is exceptionally flavorful, revealing a light floral aroma Green teas all share one important characteristic-they are never allowed to oxidize. This is the primary trait that distinguishes green teas from other types of teas and it is achieved by heating the leaf soon after it is harvested. The method used to heat the leaves plays an important role in determining the tea’s character. Gyokuro is steam heated, maintaining the leaf’s dark green color and vegetal flavor profile.
- Gyokuro is grown from specialized cultivars (clones) of the tea plant—Asahi is one of them (1 of 4) and this is the cultivar used in our Gyokuro.
- Gyokuro is one of the world’s costliest teas.
- Some tea enthusiasts believe that Gyokuro should be allowed to mature for several months after harvest and prior to consumption in order to maximize the tea’s finer qualities.
Gyokuro pairs beautifully with a variety of foods. Try it with seafood (particularly shellfish or sushi), chocolate or goat cheese. We recommend steeping Gyokuro for only 30-45 seconds at 160°. It is extremely delicate. Be careful not to over-steep it or it could develop a harsh, bitter flavor very quickly.
Ingredients: Green tea.

I have two steeps of this tea every morning. It says up to 45 seconds, but I find that 30-35 seconds is perfect. It really is so easy to oversteep and just the absolute best when it is at 30 seconds. Smooth and creamy. My day is not complete without it.
