An exceptional single estate black tea from the Assam Region of India, the largest tea growing region in the world.  Unlike Darjeelings, which peak in early spring, Assam teas develop their most desirable characteristics a few weeks later, making Second Flush Assams the most highly sought after variety.  True to form, our extraordinary Second Flush Assam is exceptionally full bodied and well balanced.  Bursting with golden tips, it offers a rich, smooth flavor with a decidedly malty character. The tea’s golden tips represent the tips of the newest leaves on the plant.  They are picked so early in their growth that they do not contain the same chemical composition as the larger, older leaves and so they do not darken during the oxidation process.  These golden tips are often an indicator of a quality, well made Assam.

Assam is home to over 900 tea gardens; whereas, Darjeeling hosts less than 90.

The intricate string of letters and numbers listed after the tea is an acronym used to indicate what is commonly referred to as the grade of the tea.  SFTGFOP1 stands for Special, Finest, Tippy, Golden, Flowery, Orange Pekoe which, in reality, is just a complicated way of describing the size and style of the tea leaf.  Calling it a grade is often misleading because it incorrectly suggests that it is an indicator of the tea’s quality, which is no longer the case. The subjective nature of the system led to significant grade inflation and over the years it has evolved into simply a way to classify black teas according to the size of their leaf.  Generally, the more letters, the larger the leaf style, though larger leaf styles do not always indicate a higher quality tea.  Quality is dependent upon numerous factors, such as: cultivation techniques, plucking method, production standards, the age of the leaf, etc.  In this case, SFTGFOP1 indicates a large leafed tea with a fair amount of golden tips.  Within Assam, this leaf style is also known as “Cream of Assam”.

Serve Assam Copper Cloud with breakfast pastries, steak and eggs, bacon, lamb, chocolate or spicy food. A famous breakfast tea, Assams are often enjoyed with milk and sugar.

We recommend steeping our Assam Copper Cloud for 3 minutes at 195°.
