A Taiwanese Oolong from the gardens in Ming Jian, Nantou County. While GABA (Gamma Aminobutyric Acid) is naturally found in tea leaves, this oolong undergoes a special fermentation process that increases GABA levels in the tea leaves. This technique was first developed in Japan in the 1980s. Harvested tea leaves are placed in a sealed container and nitrogen is pumped in to displace any oxygen. Over time, glutamate in the Camellia sinensis leaves converts to GABA.
Our GABA oolong is a sophisticated cup of tea. A light minerality in the top note, one is enveloped in warm notes of caramel, toffee and dried fig as the brew cools. Some drinkers may detect a hint of sweet potato.
GABA is an amino acid that effectively blocks, or inhibits, certain brain signals associated with stress and anxiety. We recommend steeping GABA Oolong for 3 minutes at 170°.
