Oolongs are only partially oxidized.  That is how they differ from other types of tea.  Whereas black teas are fully oxidized and green teas are completely un-oxidized, oolongs fall somewhere in between amidst a wide spectrum of flavor profiles.  Our Lavender Oolong falls toward the less oxidized end of the spectrum, creating a light, smooth body and delicate floral aroma.

Though Taiwan’s tea production is considerably less than other major tea growing regions throughout the world, its tea industry has successfully focused on quality over quantity and currently grows some of the world’s best oolongs.  Taiwan produces less than 20,000 tons of tea each year, concentrating primarily on premium oolongs–a vast majority of which are consumed domestically. Most Taiwanese tea gardens are very small operations compared to their Chinese and Indian counterparts and many of them are still family owned.

Our Lavender Oolong is what we might call a “desert island” tea. If you were marooned on a desert island and could only have one tea…we love pairing Lavender Oolong with shortbread cookies or light, vanilla flavored desserts.

We recommend steeping Lavender Oolong for 3 minutes at 195°.  High altitude oolongs are well known for their ability to withstand multiple steeps. Make sure to reuse these leaves several times before calling it a day.  Lavender Oolong only gets better the second time around…and third…and fourth…and fifth…
