Lemon Sencha is extremely versatile.  It is comforting when served hot on a cold blustery day and refreshing when served iced on a hot summer afternoon.  Try blending it with our Jasmine Pearls to add a delicate floral note.

Like all tea, green tea comes from the Camellia Sinensis plant.  The difference is in how it is processed.  Green tea is the only type of tea that is never allowed to oxidize.  In fact, shortly after they are harvested, green teas are heated in order to halt the oxidation process.  Heating the leaves also serves to preserve their chlorophyll, allowing them to retain their vibrant green color.  The method used to heat the leaves greatly influences the tea’s flavor.   Traditionally, Japanese green teas are steamed which produces a bold, thick vegetal flavor.  Chinese green teas, which are more subtle and often sweeter than their Japanese counterparts, are generally either pan fried, sun dried or bake cured.

Lemon Sencha is made using a Japanese style Sencha which is known for its mild astringency and delicate sweetness. Sencha is very high in vitamin C.

Lemon Sencha is extremely versatile.  Pair it with ginger, artichokes, arugula, beets, shellfish (particularly crab) or spicy foods.

We recommend steeping Lemon Sencha for 1-2 minutes at 180°. Japanese green teas are notoriously delicate so be careful not to over-steep this one.  Pay careful attention to your steeping time and water temperature in order to avoid any bitterness.
