Black tea is what most Westerners associate with traditional tea. It comes from the same tea plant (Camellia Sinensis) as all other forms of tea; however, unlike any other type, it is fully oxidized. Shortly after harvest the tea leaves are rolled to release the enzymes present in the leaf that trigger oxidation. The rate at which it is allowed to oxidize determines the tea’s briskness. Tea growers slow the rate of oxidation to produce a gentle, mellow black tea and accelerate the rate of oxidation to produce a more brisk tea. Our Raspberry Noire has a nice, subtle briskness to it–perfect for iced tea.
Black tea is produced in nearly all major tea growing regions throughout the world and is one of the most commonly consumed types of tea.
We suggest pairing Raspberry Noire with red meat (like steak sandwiches with sharp cheddar), cheesecake or a traditional afternoon tea.
We recommend steeping Raspberry Noire for 3 minutes at 195°.
